The ground is sandy and chalky, much like the white albariza soils of Andalucia, where Palomino has always belonged. With roughly 300mm of rain a year, the vines crop around 26 hectolitres per hectare, which concentrates everything, salinity included. Co-fermentation happens naturally in old wooden casks. Eben Sadie thinks the 2022 drinks earlier than most of his wines, and suggests buying oysters.\u003c\/p\u003e\n\u003cp\u003eBone dry and briny, running through lemon, green pear, oyster shell and a long chalky finish.
