Eben Sadie's thinking was to build a single vineyard from Mediterranean varieties that will cope with a hotter, drier future, and to get complexity from sheer diversity: Alicante Bouschet, Agiorgitiko, Pontac, Bastardo do Castillo, Trincadeira, Tinta Barocca, Lledoner Pelut, Grenache Noir, Pinotage, Cinsault, Counoise and Carignan all share the ground. The aspect brings early ripening without losing acidity. For now each variety is picked and made separately; the maiden crop came in at 22 hectolitres per hectare and fermented with 30 per cent whole bunches.\u003c\/p\u003e\n\u003cp\u003eYouthful and unusual, with red and blue fruit, wild herbs, pepper and a lightly grainy finish. Serve at 16 degrees after a short decant.
