The couple learned their craft in Burgundy and Bordeaux before returning to Tasmania and replanting an abandoned vineyard on a sloping site at Cradoc, which they farm organically and work largely by hand. The Huon is cool and maritime, with a long slow ripening season that holds acidity and keeps alcohol moderate, and the Lipscombes make in small batches with wild ferments, whole bunches where the fruit allows, maturation in French oak and as little intervention as the vintage permits.
