Up here in Burgundy's far north, closer to Champagne than to Beaune, the cool climate and Kimmeridgian limestone full of fossilised oyster shells give the grape a lean, mineral edge. Fermentation and ageing are in stainless steel with no new oak, and a screwcap keeps it bright.\u003c\/p\u003e\n\u003cp\u003eCrisp and light-bodied, with citrus, green apple and a salty, chalky finish.
