The Dagueneau family has farmed at Les Berthiers in Saint-Andelain for generations, and the vineyards are worked organically. La Léontine comes from a parcel of just 0.7 hectares on Kimmeridgian marl, the same fossil-rich clay-limestone that runs north through Chablis and the soil that gives Pouilly-Fumé its firmest, most saline expression. Rather than the tank used for the estate's Tradition bottling, this cuvée is fermented and matured in aged barrels which have long given up their oak flavour and act instead as a slow-breathing vessel.
