California was four years into drought by 2015, so berries and bunches were small and yields low; picking happened in early September. Fermentation ran ten to fourteen days in open-top vessels with a small proportion of whole berries and a smaller one of whole bunches, after which the wine went through the 1906 hand-crank press that Lore Olds still works with his brother. Fourteen to twenty months in used oak followed, then bottling unfined and unfiltered, and years of cellaring before release.\u003c\/p\u003e\n\u003cp\u003eSinewy and intense without being big: leatherwood honey, olive, dried herbs and liquorice, with spicy berry succulence against a meaty, peppery savour. Serve at 16 degrees.
