Over a base of juniper, angelica, cassia, coriander and citrus peel sit five local seaweeds, each prepared on its own: channel wrack for firmness, sugar kelp for sweetness, dulse for savoury salt, pepper dulse for a spicy, umami note, and carrageen moss, vapour-infused, for a soft nuttiness. Pepper dulse hides among rocks at the tide line and can only be gathered on a full moon. The Forsyth still runs cool and the cut is narrow.\u003c\/p\u003e\n\u003cp\u003eSavoury and coastal, with juniper, citrus peel and a genuine saline tang through the finish. Serve it long with a light tonic and a slice of pink grapefruit, or over ice with soda and a caper berry.
