The St Georg bottling is handled in the Burgundian manner: whole-bunch pressed, fermented in barrel with roughly half new oak and half seasoned wood, then left on its lees to build a creamy, layered texture. Time in wood and a softening of the malic acidity give spice and a nutty edge, but the fruit is picked early enough to keep the acid line intact.
