All the fruit was hand-picked. Whole clusters went in at whatever rate each site suggested, landing near 35 per cent overall, and fermentation ran on indigenous yeast. Elevage lasted twenty months on lees in French oak of every size from 225 to 2,500 litres, a quarter of it new, and the wine was bottled without filtration. Pete Schell's blending is the real craft in this bottle.\u003c\/p\u003e\n\u003cp\u003eOld-school Barossa in shape: plum, blackberry, iron and a soy-like savouriness over supple tannin, with real length. Serve at 17 degrees after a short decant.
