Standalone bottlings have been rarer; this is only the third. The fruit comes from vines grafted over to the variety about a decade before, high on the eastern side of the valley. Hand-picked, chilled overnight, crushed and left four hours on skins, the settled juice fermented on wild yeast, mostly in stainless steel with a small portion in old French oak.\u003c\/p\u003e\n\u003cp\u003eDry, gently textured and low-key, with lemon, green melon, fennel and a chalky finish. Serve properly cold, around 10 degrees.
