As ever, eight old vineyards supply the fruit, concentrated around Ebenezer, Williamstown and Bethany, dry-grown and with vine ages running from 75 years to more than 150. Indigenous yeast handled every parcel, macerations lasted from eight to twenty days, and the wine matured in a mix of stainless steel and well-seasoned 600- and 1,200-litre barrels. Perfume, finesse and savoury structure have been the brief since the label began in 2001.\u003c\/p\u003e\n\u003cp\u003eJuicy and fragrant, with red cherry, pomegranate, dried thyme and a dusting of pepper over fine tannin. Serve at 15 to 16 degrees.
