The winemaking follows the usual house pattern: slow natural ferments, gentle pump-overs, some foot-stomping. A decent handful of whole bunches went into the 2023, fermented in stainless steel and concrete, and the wine then rested on light lees across steel vats, seasoned thick-staved 600-litre demi-muids and a 2,500-litre foudre, before bottling unfined and unfiltered eight months after harvest.\u003c\/p\u003e\n\u003cp\u003eGarnet in the glass, then crushed raspberry, cherry spice and rose petal on the nose and a juicy palate driven by plum-skin acidity and fine sandy tannin. Serve at 15 to 16 degrees.
