Fruit was picked by hand, cooled overnight and destemmed, with 30 per cent whole bunches kept back on the Shiraz. Natural fermentation ran ten to twenty-four days in small steel and wooden vessels, then the wine went to puncheons and demi-muids, 40 per cent of them new, for twenty months before bottling unfined and unfiltered. It is Pete Schell's tribute to old-vine Barossa, made his way.\u003c\/p\u003e\n\u003cp\u003eDeep and captivating, with dark fruit, florals and spice, a richly textured palate, tight tannin and driving berry acidity.
