The fruit came from two well-regarded Barossa Valley vineyards, Vinehaven and Rock Valley, the Mataro planted in 1926 and the Shiraz in 1996. Both are farmed simply: hand-pruned, hand-picked, largely dry-grown, minimal inputs. Each parcel was destemmed and fermented in small stainless tanks for a fortnight, then pressed into two vessels for twenty-two months, a seasoned 900-litre foudre and a new 500-litre puncheon.\u003c\/p\u003e\n\u003cp\u003eBroody and complex, with juicy berry fruit, earthy depth, a rumble of minerality, woodsy spice and a black tea lift, on stony tannin and fresh acidity. Serve at 17 degrees.
