The Cinsault is off an old Bethany block, the Mataro from two sites at Ebenezer, and the Grenache from both estate vines and the long-standing Garcon sources. Vine ages span 30 to 110 years and soils range from classic terra rossa to deep sand. Most of the fruit fermented as whole berries in tank, with a little whole-bunch Grenache, then ten months on light lees across concrete, steel and seasoned 700- and 1,250-litre wood.\u003c\/p\u003e\n\u003cp\u003eMataro brings the gamey, savoury weight, Cinsault the spice and perfume, Grenache the juicy red fruit and freshness. Fine-boned and moreish. Serve at 16 degrees.
