Both are organically dry farmed by hand. An extended, comparatively cool season delivered exactly the restraint this wine needs. Fruit fermented on indigenous yeast in small open stainless tanks over twelve to thirty-five days, with a bucket of Viognier added mid-ferment for lift, then twenty-two months on light lees in French barriques and 700-litre barrels, about 35 per cent new.\u003c\/p\u003e\n\u003cp\u003eAromatic and muscular but agile, with dark blue fruit, warm brown spice and earthy depth over svelte structure and a sweetly enveloping finish. Decant and serve at 17 degrees.
