Three old-vine Semillon sites, aged 60, 70 and 90 years, sit at Ebenezer, in the foothills near Bethany and on the valley floor near the Para River. Everything was hand-picked and chilled, macerated between two and twenty-four hours, wild-fermented in old French barriques, puncheons and stainless steel, then held ten months on lees.\u003c\/p\u003e\n\u003cp\u003eLean and saline, with lemon, green apple, chalk and a dry, textural finish. Serve cold, around 10 to 11 degrees.
