Semillon leads again, drawn from three old-vine Ebenezer sites aged 65, 75 and 95 years; the grape has been in the Barossa since the 1850s. Clairette from a high Rowland Flat block on the valley's eastern side ripens late and holds its acid, which brings the freshness, while Ugni Blanc and Vermentino add texture and a lick of salinity. Careful vineyard work and a restrained hand in the shed have done the rest, with maturation on lees in mostly older wood.\u003c\/p\u003e\n\u003cp\u003eFleshy and textured, with stone fruit, citrus, spice and lovely hay and talc characters, phenolic tension underneath and a long savoury finish. Serve at 11 to 12 degrees.
