Old-vine Semillon supplies the weight, Grenache Gris the citrus and spice, and the late-ripening Clairette a pop of freshness. Each parcel was picked by hand and spent two to four hours on skins, then was destemmed and pressed, the Clairette and Semillon to stainless steel and the Grenache Gris to mature French oak. Six months on lees followed, with part of the Semillon through malolactic conversion.\u003c\/p\u003e\n\u003cp\u003eSavoury and primary at once, with citrus, spice and herb characters over fleshy medium weight and a waxy texture. Serve at 11 to 12 degrees.
