Ebenezer, Bethany, Tanunda and Moppa supply the core, all places with a long record for depth and structure in Shiraz, and Pete Schell blends in wine from the Barossa Ranges and Eden Valley to keep things fresh. Hand-picked grapes fermented wild in open-top steel and oak with roughly 20 per cent whole bunches, then the wine aged across French oak from 225 to 2,500 litres plus a little steel, going into bottle twenty months after vintage.\u003c\/p\u003e\n\u003cp\u003eMedium-bodied and savoury, with dark cherry, mulberry, cracked pepper and dried herbs over fine tannin and fresh acidity. Serve at 16 to 17 degrees.
