Hand-harvested fruit fermented with 30 per cent whole bunches in both wood and steel over ten to twenty-four days, then went into a mix of puncheons, demi-muids and barriques, 40 per cent of them new, resting on light lees until racking and blending twenty months after harvest. The first single-vineyard release came in 2015, and the wine has grown in stature since.\u003c\/p\u003e\n\u003cp\u003eRestrained power, with abundant dark fruit and complex spice held in balance by weight, structure and acidity, and a finish that will not quit. Serve at 17 degrees.
