Three years of farm-sharing later, the wine is doing the arguing: dry-grown, spur-pruned bush vines that give miserable quantities of strong, characterful fruit. It was hand-harvested and fermented wild in stainless steel with 40 per cent whole bunches and the rest uncrushed destemmed berries, pumped over every second day, then matured on light lees in seasoned thick-staved 500-litre French oak puncheons.\u003c\/p\u003e\n\u003cp\u003eDense with ripe fruit, dark spice, earth and a purple floral lift, then silky fruit on the palate with bright acidity, tight-grained tannin and an anise-tinged savoury close. Serve at 16 degrees.
