Two exceptionally old dry-grown bush-vine sites supply it: Grenache, over 70 per cent of the blend, from vines planted around 1890 in deep coarse sand, fermented naturally with half whole bunches for extra fragrance; and Cinsault from 1910 plantings on red clay, destemmed and fermented as whole berries. Both were hand-picked at just-ripe to hold onto natural acid, spice and firmer tannin.\u003c\/p\u003e\n\u003cp\u003ePerfumed and sappy, with red cherry, cranberry, dried flowers and a peppery, savoury finish on fine tannin. Serve at 15 to 16 degrees, lightly chilled if the day is warm.
