Each block is picked by hand at just-ripe, a decision Pete Schell makes to hold natural acid, spice and the edgier side of the tannin. Fermentation is natural, with a portion of whole bunches, and the wine comes out of large old wood after six months on the same logic: enough time to settle, not enough to smother the fruit.\u003c\/p\u003e\n\u003cp\u003eServe at 15 degrees. The texture is crunchy, the acid cleansing, and the savoury grip sits neatly under generous red fruit.
