The vines are dry-grown, largely bush-trained, and average 50 years, with the oldest blocks close to 90. Hand-picked fruit was chilled overnight before crushed bunches were macerated for six to 24 hours, then pressed. Wild ferment took place mostly in tank, with five per cent in old French demi-muids for a little breadth, and the wine rested on lees before bottling. Pete Schell treats it with the same care he gives the reds.\u003c\/p\u003e\n\u003cp\u003eDry and chalky, with pale strawberry, grapefruit peel and a wet-stone edge. The cut is nervy and the close saline and long.
