Vine age runs from six to 60 years. The three hectares of Grenache at Rostein were planted in 2018 at 490 metres, which Pete Schell believes makes it the highest Grenache in the state. Three-quarters of the crop was destemmed and fermented for a fortnight in small open-top vessels and terracotta amphora; the rest went in as bunches for six weeks. Eleven months in seasoned wood followed, then bottling without fining or filtration.\u003c\/p\u003e\n\u003cp\u003eIn the glass it is bright and floral, with red plum, dried thyme and a fine dusting of tannin. Amphora and whole bunches give lift and a savoury edge.
