Pete Schell has worked with them since founding Spinifex in 2001, favouring gentle extraction, large-format seasoned oak and as little intervention as the fruit allows. This 2009 is a mature release from that approach, and at this age the variety's firm tannin and savoury, gamey side have had plenty of time to settle. Bottles this old are a matter of luck and cellar space.\u003c\/p\u003e\n\u003cp\u003eAged Mataro heads towards leather, dried fig, earth and tobacco leaf, with the tannin softened and the fruit drawn inward. Serve at 16 to 18 degrees and decant it.
