The vines are rooted in classic terra rossa, red clay over limestone, with gravelly sand through it, and the plots are mostly dry-grown. What Pete Schell values in this fruit is early flavour development alongside natural acid that stays vivid. Picking was by hand, the fruit destemmed with partial berry crushing and run to tank for fermentation, then 10 months in large neutral French oak before bottling with light filtration. The variety has been in the range since 2006.\u003c\/p\u003e\n\u003cp\u003eJuicy and savoury at once: dark plum, dried oregano, a dusting of cocoa. The tannin is fine-grained and the finish clean.
