Fermentation is arrested with neutral grape spirit at around seven per cent alcohol so the natural sugars stay put, and after a short spell in oak to let the parts knit, it goes to bottle and ages much as a red table wine would.\u003c\/p\u003e\u003cp\u003eRose petal, raspberry and star anise open it up, and the palate runs red-fruited and spicy with fine soft tannins.
