Jonatan García's entry-level red takes its name from the seven climats of the DO. It is built mainly on the wildly aromatic Listán Negro with a small portion of Castellana Negra, sourced today from 35 separate plots of vines ranging from 10 to 100 years old at altitudes reaching 800 metres. Each parcel begins vinification separately in stainless steel before the wine is blended and aged half in small concrete tanks and half in mature French demi-muids. The style has grown prettier and lighter over the years: bright and peppery, with a volcanic mineral backbone, supple, easy-going tannins and mouthwatering smoky, spicy notes.\u003c\/p\u003e\n\u003cp\u003eDrink over the next four or five years, and it takes a light chill well.
