That is the Farvie patch, and winemaker Rob Mann says the fruit off it is different too, more ferrous and mineral, with velvety tannin. Pickers go over each vine several times, taking only the best bunches, then berry sorted and gravity-fed to French oak for a natural ferment including 28 per cent whole bunches. Mourvèdre used to be co-fermented in; now that it has its own bottling, that share has fallen to four per cent. Eleven days on skins, then large seasoned French oak.\u003c\/p\u003e\n\u003cp\u003eRed fruits and iron filings, dried herbs, a little blood orange, and tannin with a velvet nap to it.
