Rob Mann used 67 per cent whole bunches and aged the wine 11 months in large-format, fine-grained barrels, with no new oak, which he sees as the harder and more interesting path. He is chasing perfume, florals and personality, not density.\u003c\/p\u003e\n\u003cp\u003ePerfume first: violets, peppercorn, red and blue fruit, then an ironstone, ferrous core that runs the length of the palate. Serve at 16 degrees.
