The vines sit on the rich gravel and loam of the Wilsons Pool vineyard, planted in the early 2000s and dry-grown. Fruit was hand-picked over two days for flavour and tannin ripeness, berry sorted, and moved by gravity into a single stainless steel fermenter with 20 per cent whole bunch. Rob Mann finds a real synergy between a cool region and a warm season with this variety, and he picked earlier than the year before to hold freshness. Eleven days on skins, then 11 months in fine-grained large-format French oak.\u003c\/p\u003e\n\u003cp\u003eWhite pepper, wild herb and savoury depth over a textural, mid-weight palate, and this is the wine that most clearly shows the site's rusty-nail character. Serve at 16 degrees.
