The fruit comes off dry-grown bush vines up on Powderbark's ironstone gravel crown, picked at 12.5 to 13 per cent potential alcohol, short of full maturity, to keep the acid taut. Pressing used a traditional ultra-light Champagne cycle, with a small proportion of bush-vine Grenache and a splash of Vermentino folded in for complexity and freshness. Three months on lees in neutral French oak followed. This was the inaugural release of the wine.\u003c\/p\u003e\n\u003cp\u003eDry and gently savoury, with strawberry, rosewater, citrus and a mineral finish that runs long. Serve at 9 to 10 degrees.
