Picking happened on the cusp of full maturity, at 12.5 to 13 per cent potential alcohol, to protect the acid. The Mourvèdre went through a traditional ultra-light Champagne press cycle alongside the Grenache and Vermentino, then rested three months on lees in neutral French oak. A cool, fresh season added weight, texture and savoury nuance without costing the wine any poise. In magnum it will hold and improve for longer still.\u003c\/p\u003e\n\u003cp\u003ePotent and lightly spiced, with strawberry and rosewater against complexity that keeps unfolding, a rosé with real finesse and structure. Serve at 9 to 10 degrees, in proper glasses.
