Pressing followed a traditional ultra-light Champagne cycle, with a small share of bush-vine Grenache and a splash of Vermentino added for complexity and to reinforce the acid line. Three months on lees in neutral French oak gave the wine its texture before bottling. This was the inaugural release, and it set the pattern for what has become one of the more talked-about rosés in the country.\u003c\/p\u003e\n\u003cp\u003ePale copper, thoroughly dry, with strawberry, rosewater, wet stone and a saline grip. There is more substance here than the colour suggests. Serve at 9 to 10 degrees, in a wine glass.
