The 2023 blend is 86 per cent Mourvèdre, 10 per cent Grenache and four per cent Vermentino, mostly off dry-grown bush vines on the ironstone gravel hilltop. Fruit was picked on the cusp of full maturity, at 12.5 to 13 per cent potential alcohol. An ultra-light Champagne press cycle followed, then three months on lees in neutral French oak. The cool season shows in the freshness underpinning the added weight and savoury detail.\u003c\/p\u003e\n\u003cp\u003eThere is a lot of wine in the glass here: strawberry, rose water, citrus pith and a mineral, saline base, with finesse and grip. Serve at 9 to 10 degrees.
