In the cellar the approach is just as atypical for Australian Riesling, with whole-bunch pressing, only light settling, then natural fermentation on high solids in tank, where the ferment temperature is allowed to climb as high as 20 degrees. That only works with very good fruit, and here it builds genuine texture and a quiet complexity behind the fruit.\u003c\/p\u003e\n\u003cp\u003eLime and white flower with a savoury, saline undercurrent and a broader mid-palate than most Australian Riesling gives you. Dry, long, textural. Serve at 9 to 10 degrees.
