Rob Mann reports fruit of real depth and intensity with balanced, high natural acidity in spite of the season. Pressing was done as whole bunches, fermentation was natural in stainless steel on a high solids component, which he says builds nuance and a saline core, and the wine then rested on lees in tank to hold freshness and build texture.\u003c\/p\u003e\n\u003cp\u003eConcentrated and dry, with lime cordial, white peach skin and a chalky mineral close; the acid is high but balanced. Serve at 9 degrees.
