Understanding the style starts with the farming: organic, dry-farmed, cane-pruned, rows north to south, shade cloth over the Riesling so the bunches never roast. The cellar work follows, with fruit from two of the oldest Powderbark blocks whole-bunch pressed and fermented on indigenous yeast in stainless steel with a high solids component, which Rob Mann says builds nuance and a saline core. He wants texture, aroma and flavour complexity, not austerity.\u003c\/p\u003e\n\u003cp\u003eIntense and tightly wound, with lime leaf, lemon curd and a wet-stone finish; the concentration is obvious and the acid drives hard. Serve at 9 degrees.
