Unlike the estate's bush-vine Grenache and Mourvèdre, the Syrah is trellised, though single-stake plantings are planned. Fruit was hand-harvested and sorted, then gravity-fed to small wooden and stainless steel fermenters, with six per cent Grenache and a trace of Mourvèdre going in for complexity. Natural fermentation ran with 18 per cent whole bunches, and after a fortnight on skins the wine was pressed straight into large-format, fine-grained French oak, 19 per cent of it new, for 11 months. Bottled unfined and minimally filtered.\u003c\/p\u003e\n\u003cp\u003ePeppery and floral, with blue fruit, smoked meat and chalky tannin, the fruit pulled tight by acid. Serve at 16 degrees.
