The Aligoté portion, 0.10 hectares of old Aligoté Doré, lies at the foot of the vineyard on ostrea acuminata marl, a limestone marl studded with fossil oyster shells that is found in thin bands through the Côte and is prized for the tension it gives white wines. Pataille credits that soil with the smoky, reductive minerality he consistently finds in this cuvée. Vinification follows his usual practice for Aligoté: fermentation with indigenous yeasts, ageing chiefly in used casks and a year in barrel before bottling, with nothing done that would blur the difference between one lieu-dit and the next.\u003c\/p\u003e\n\u003cp\u003eDrinking now and worth four or five years.
