His regional red is drawn from a spread of small parcels in Marsannay and the Hautes-Côtes, including one planted in 1956, so old vines make up a good share of the blend. Each parcel is vinified separately, with different maceration styles depending on the fruit, before the final assemblage, which typically includes around 30% whole bunches. The wine ages in barrel for a year and sees no sulphur until bottling.
