The blend brings together several sites, including one parcel planted in 1956, so old vines make up a good share of the fruit. Each parcel is fermented separately, with the maceration adjusted to suit, and the final assemblage usually carries around 50% whole bunches. The wine then spends a year in barrel and sees no sulphur until bottling, an approach that asks for careful cellar work but preserves the fruit's lift.
