His vines in this terroir were planted in 1951, 1989 and 2006. The soils are shallow and rich in red clay over a limestone known as Ostrea acuminata, named for the sickle oyster fossils it contains. About half the blend, the fruit from the oldest vines, ferments as whole bunches while the younger-vine fruit is destemmed. The wine was raised for twenty-four months in mainly used oak and bottled unfiltered.
