Sylvain Pataille's vines here were planted across three generations, in 1951, 1989 and 2006. About half the blend, from the oldest vines, ferments as whole bunches, while the younger-vine fruit is destemmed, a split that keeps both perfume and flesh in the wine. The 2021 was raised for 24 months mainly in used oak and bottled unfiltered, in line with the domaine's low-sulphur approach.
