Growing it outside Piedmont is difficult: it ripens late, demands a long season and produces firm tannin. Heathcote's warm days and cool nights on ancient greenstone soils give it a chance. The wine is macerated on skins for an extended period and matured in large oak.\u003c\/p\u003e\u003cp\u003eDecant and serve at 17 degrees with braised beef, mushroom risotto or hard cheese.
