The blend is seventy-five per cent Garnacha Blanca and twenty-five per cent Macabeu from fifteen- to thirty-five-year-old vines around Capçanes. Dominik Huber and his partner Eben Peceric pick earlier than is usual locally, when flavour is ripe but acidity is intact; Montsant permits harvesting whites at eleven per cent potential alcohol, which allows a lower-alcohol style than Priorat's rules would. Half the grapes are direct-pressed and half macerated on skins for five to seven days, a step back from earlier, more tannic releases as the pair have looked for finesse and clarity of place. Fermentation is with wild yeasts, followed by six months on lees in tank, and the wine is bottled unfiltered.\u003c\/p\u003e\n\u003cp\u003eDrink over the next three or four years, ideally from a larger glass. Good with charcuterie, roast chicken or a chickpea and pumpkin dish.
