Apart from the skin-contact Brisat, the wines here ferment as whole bunches in concrete, amphorae and stainless steel, with no oak at any stage and extraction kept as gentle as possible. The grapes are crushed by foot and taken off skins after eight to twelve days to finish fermentation; as Peceric puts it, there is no need to extract tannin. Montsant's rules also allow earlier picking than neighbouring Priorat, with minimum alcohol set at 12.5 per cent for reds against 13.5 per cent across the border, and that latitude is central to the style. This bottling is entirely Garnacha from bush vines averaging twenty-five years around Capçanes, sitting at 350 metres on the mixed sandy clay panal soils with a range of exposures.\u003c\/p\u003e\n\u003cp\u003eReady now and good for five years, it suits grilled lamb, chargrilled capsicum dishes and manchego.
