Planted in 2005 on a friend's farm, well outside the AVA line, the ground is cooler and wetter than the accepted wisdom said grapes could handle. 2016 brought a return to classic conditions after three warm years running. Fruit was left hanging as long as possible, hand-picked, sorted, mostly destemmed and fermented in open-top vessels on a pied de cuve started out in the vineyard, then pressed after three weeks into old barrels.\u003c\/p\u003e\n\u003cp\u003eClassic in shape and now nicely aged, with sour cherry, rhubarb, damp earth and a fine, translucent structure that holds. Serve at 14 to 15 degrees.
